  1. Before making brownies, cupcakes, etc., begin soaking dates (see notes) in hot water and bake sweet potato in microwave for 6-8 minutes or until tender.
  2. When cool enough to handle, peel sweet potato and drain dates RESERVING SOAK LIQUID
  3. Puree all ingredients in food processor, bullet or Twister jar until smooth, adding reserved soak liquid as needed to help it get moving.
  4. Taste and add maple syrup if desired for a sweeter finished product. I find that even a tsp can round out the flavor so it appeals to everyone.
  5. Store frosting in the fridge for up to a week. It will thicken as it chills and can be piped.
Recipe Notes

The water used to soak the dates is often very sweet, so soaking the dates in as little water as possible will keep that natural sweetness concentrated for use in the final product. I do this by packing my dates in a liquid measuring cup, then topping with just enough hot water to cover. Sometimes I will place another measuring cup or similar item to make sure dates stay submerged.
