Christmas Winter Fruit Salad [Vegan]

 

Wanting to make a fruit salad that was both healthy and festive, I tried a number of different recipes before settling on this simple combination. While dressings can add a lot, I prefer letting the fruit shine on it’s own.

Mother nature has already created these decadent fruits with a wide variety of natural antioxidants and immunity support. Why not enjoy them in their simplest form?

For this Christmas Day Fruit Salad, I settled on Pineapple, Kiwi, Pomegranate, Raspberries and Pear. Next time I will be adding a little fresh mint.

 

Every so often you will hear a health expert recommend fruit intake be limited because of the high fructose content of the diet. But one study revealed no adverse affects for those consuming 20 servings of fruit a day, but rather an astounding drop in LDL cholesterol 1. Similarly even diabetics were found to have no adverse affects from eating more whole fruits. It appears the downside comes when fruits are processed into juice or otherwise no longer the “complete package”. So enjoy your fruit and boost your immunity during the holidays when you need it most!
