5 Ingredient BEST Plant-Based Waffles [Gluten-Free, Oil-Free]

After searching and experimenting for YEARS, I finally found a plant-based waffle recipe we all love. I cannot tell you how many failed attempts we had, all while I was experimenting with various vinegars and flours to get a tasty, gluten-free waffle that I didn’t up in crumbs as I extracted it from the waffle iron.

This recipe’s got a short-list of ingredients, it’s made from oats so it’s whole grain AND gluten-free. And a generous scoop of flax means it’s packed with some of the healthiest fats you can find, also making them more filling.

Even better, the fat in the flax makes them far less prone to sticking to the waffle iron! You might want to test this on your waffle iron before you pour a full batch, but we’ve been making them without a drop of oil sprayed on our waffle iron (which we’ve had for 14 years and it’s finish has seen better days . . . ) and they come out no problem!

Further, I’ve tested these with plant milk and water and really can’t taste a difference. So we’ve been using water and avoiding using an entire extra carton of almond milk every time we make these.

I pair these with a simple tofu scramble for a hearty meal when the fridge is looking bare.

To turn these into a decadent breakfast, use berries and the vanilla cashew cream I use to top my Kneaders Raspberry Bread Pudding. Divine! I like to leave the sweetener out of the actual waffles and just top with applesauce, syrup or berries. But feel free to add 2-3 T pure maple syrup, coconut sugar, or sweetener of choice if you prefer.

We usually make a double batch, and while it’s a little much to make that much flour in the blender at once, I simply measure out the oats, flax, salt and baking powder again after the first batch of waffles starts cooking. Right after we’ve used up the batter in the bowl, we add water and vanilla and the flour mixture and stir them up so they are ready to go in the waffle iron.

Now all I need is about 3 waffle irons and we can have lunch done in no time. Did I mention we eat these more for lunch than anything else? Our smoothie and oatmeal breakfast routine keeps things so smooth I only depart from it for very special holidays and a few rare occasions when we need to leave the house before 7 am.

  1. Combine oats, baking powder, salt and flax seed in blender and process until it becomes flour.
  2. Combine water and vanilla in large batter bowl. Add flour to water and whisk until just combined. Preheat waffle iron and allow batter to thicken for about 5 minutes. Add additional water to thin to desired consistency.
  3. You may wish to cook one small waffle and see if they will release from your waffle iron without greasing it. Thinner batter does result in fluffier waffles but they also stick a little more easily.
  4. Cook for about 4 minutes or until they reach desired crispiness.
