Einkorn Waffles or Pancakes

After years of searching for a favorite plant-based waffle recipe, we finally settled on this one a couple of years ago. Well, today I think we may have had that one replaced. My kids LOVED these waffles and the Einkorn gave them such a nutty, rich and delicious flavor.

INE-what? If you haven’t heard of Einkorn, you’re not alone, but trust me, it’s worth a try!

What is Einkorn?

Einkorn is an ancient grain related to wheat. It has a similar appearance, flavor and texture, but has been protected from some of the modernized practices that we suspect have caused the rampant increase in gluten sensitivities.

Although Einkorn is not gluten-free, many people with non-celiac gluten sensitivity find that they can tolerate it much better than wheat. And if you don’t have an issue with wheat, you can definitely substitute wheat or spelt flour here.

Where Do I Buy Einkorn?

Definitely the most affordable place I’ve found is Azure Standard. Our family relies on Azure Standard for many of our grains and legumes as well as things like coconut sugar and nutritional yeast.

We order grains and legumes in 25 or 50 lb bags which are delivered to our drop location once a month.

This is the best price I’ve found for many of these organic items and I love that once I get them home I don’t need to think about buying them again for a few months!

Since I was out of town for the last drop, I ended up getting this Einkorn on Amazon. It’s always hard to beat the convenience of having things delivered to your door!

Should I Get Einkorn Flour or Berries?

I bought the Einkorn berries and then ground them into flour in my Blendtec Blender. I was pleasantly surprised that they ground up into flour more quickly and easily than when I’ve tried wheat or spelt. Anytime you can grind your own flour it’s a great idea, as the nutrient content is highest (and flavor is usually the best) in freshly ground flour.

Instructions
  1. Combine all waffle/pancake ingredients in a bowl and mix well. Let sit for 10 minutes. This recipe can be used to make pancakes or waffles.
  2. Serve with maple syrup, jam, and/or powdered sugar for a real treat!
Recipe Notes

If you have a kitchen scale, I found that 1 lb (16oz) Einkorn Berries produced about 4 cups of flour.

This recipe works great doubled or tripled!
